Each weapon usually has a specific to fill in each category. 1 handed swords are usually best for close CQB type attacks, or to take out targets who are focused against Cav, as the spears may have a long reach, spearmen can be easily overwhelmed by melee only units like man-at-arms, Swordmen, so forth. For polearms the glavine, voulge or warrazor weapons are the heaviest hitters. Axes will hit multiple opponents and maxes will ignore most armour. If you want a swing sword then pick a curved one. Generally their swing damage is higher than their straight sword counterparts. The tradeoff is a worse stab.

From my experience weapons with a high handling stat recover faster from a blocked or interrupted attack but that could also come from the weight stat (handling seems to be calculated from the combination of the weapons length and weight -> short length + low weight = high handling stat).

After 300 skill (I think) in smithing you get an increased chance to make "legendary" weapons. This adds a few extra points to random stats in the weapon. If you grind long enough (doesn't take too long really) you can usually get the bonuses where you want them.
So i think a really long Romphalia, Schyte/Naginata/Glaive, Voulge, Bill type weapons are better because they will let you swing. Menvalion could be used also but you said you have 2h axe and normal Menvalion (not fine steel, which has very inferior swing damage) has similar reach with 2handed axes.
The axe has the problem of not working when the enemy gets close. You really needs to stay at a certain distance, same as with a polearm. The sword doesn't have this problem, good at short to medium range, with less dmg per hit ofcs. But a good chopping sword is amazing in terms of DPS still. The Polearm has a reach advantage, a big one.
